This particular infusion contains chillies from the Abruzzo region in Italy. The chillies are particularly spicy and they are dried (hanging upside down) before being dunked into their dedicated bottle. Abruzzo olive oil is known locally as olio santo, or holy oil, that's because it provides a glowing and blessed table accompaniment at mealtimes.
